MuertoĀ embarks on a world-first journey by allowing the yeast to die, evolve, and rest over a three-week āafterlife,ā building complexity much like the malolactic fermentation found in the finest rums. The process is enhanced by the Mozart method, playing classical music during fermentation, which helps deepen the connection between agave and yeast.
Two Distinctive Batches:
- Batch One: Agave from the Puerta de la Carreta fields, wild-fermented for 28 days.
- Batch Two: Agave from Capulin Verde, wild-fermented with fibers for 32 days.
